This is a recipe for homemade granola that I make. It is delicious just to snack on, or in a bowl with milk. I also use it in my banana surprise muffins.
4 cups old-fashioned rolled oats
2 cups sweetened, shredded coconut
2 cups sliced almonds, optional
3/4 cup vegetable oil
1/2 cup honey
4-5 cups dried fruit (I use craisins, cherries, blueberries, apricots & apples)
1 cup roasted, unsalted cashews, optional
Preheat the oven to 350 degrees.
Toss the oats, and coconut (& almonds) together in a large bowl.
Whisk together the oil and honey in a small bowl; pour over the oat mixture and stir with a wooden spoon until all the oats (& nuts) are covered.
Pour onto a 13x18 baking sheet.
Bake, stirring occasionally until the mixture is an even golden brown, roughly 30-45 minutes (I like mine on the dark side).
Remove the granola from the oven and allow to cool.
Add the dried fruit (& cashews).
Store in an airtight container.
Makes 12 cups

I will forever refer to this recipe as the "Million Dollar Granola" recipe!!! Reason: the TEN POUNDS of dried cranberries that mother purchased for us!!! It will probably be the most expensive granola EVER made! Thanks Alyssa!
