There is nothing like a warm muffin and a cup o' joe for breakfast...yumm-o!
This is a recipe from the Barefoot Contessa; I tweaked it just a smidge.
3 cups flour
2 cups sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 pound unsalted butter, melted & cooled
2 XL eggs
3/4 cup whole milk
2 tsp vanilla
2 bananas, mashed
1 banana, diced
1 cup diced walnuts, optional
1 cup granola
1 cup sweetened coconut, dried banana chips or granola
Preheat the oven to 350 degrees.
Line 24 muffin cups with liners, or spray with Pam
Sift the flour, sugar, baking powder, baking soda and salt into the bowl of an electric mixer with a paddle attachment.
Add the melted butter and blend.
Add the eggs, milk, vanilla and mashed bananas.
Scrape the bowl and blend well; be careful not to overmix.
Fold the diced bananas, (walnuts), granola and coconut into the batter.
Spoon the batter into the prepared pans, filling each cup to the top.
Top each muffin with banana chips, granola or coconut, if desired.
Bake 30 minutes, until the tops are golden brown.
Makes 24 average-sized muffins.

These muffins deserve a 5-star rating! They are moist and oh, so tasty! Next time I make them, however, I won't fill the muffin liners to the top because mine spread a little. I might even get an extra muffin or two by doing that! Otherwise, a top-notch recipe from one of my FAVORITE chefs! (that's you, Alyssa!)
